In Medieval Europe, Church officials and local nobles often forbade Jews from baking bread at all.

In 1264, the Polish Prince declared that ‘Jews may freely buy and sell and touch bread just like Christians’. Jewish bakers made bread by boiling them, instead of baking--like obwarzanek-- which then became bagels.
